Roasted chickpeas are a great healthy snack. Super versatile as well and can be flavored so many different ways. I used maple syrup in this recipe, but these would be nice with some brown sugar as well or any other sweetener that you may have on hand.
Preheat
oven to 400 degrees F.
Ingredients
1 15-oz can chickpeas (drained and rinsed well)
1 tablespoon olive oil
1 tablespoon maple syrup
1/4 teaspoon cayenne (more or less depending on how spicy you like)
1/4 teaspoon salt (adjust and add more after baking if necessary)
1 teaspoon fresh thyme leaves.

1 tablespoon olive oil
1 tablespoon maple syrup
1/4 teaspoon cayenne (more or less depending on how spicy you like)
1/4 teaspoon salt (adjust and add more after baking if necessary)
1 teaspoon fresh thyme leaves.
Combine olive oil, maple,
cayenne, salt, and thyme. Pour over the chickpeas and toss to coat. Lay
chickpeas in single layer on a parchment lined baking sheet.
Bake for 30
to 40 minutes, toss to mix halfway through. Towards to end, check often
to avoid burning.
